A vacancy exists in the Smoked Meats Department for the job of Smoker.


This job vacancy is slated to start 1st shift (Mon, Tues, Fri, Sat, Sun) with the following normal working hours4:00a.m-12:30p.m

  • Picks up fallen bellies and reconditions as required.
  • Oil trees and position to smokehouse.
  • Makes up sawdust trucks and soaks.
  • Fills woodchip hoppers as necessary.
  • Loads & starts cooking cycle in houses as they are ready.
  • Places marked charts indicating starting times.
  • Fills and start liquid smoke as necessary.
  • Watches smokehouse during cook cycle and adjusts as per procedure.
  • Checks temperature of bellies and shuts off cook cycle when correct internal temperature is reached.
  • Makes charts showing product cooked and time when internal temperature is reached.
  • Changes needles in pumps as directed.
  • Washes smokehouses as necessary.
  • Set up, operate and tear down drencher as necessary
  • Contact Supervisor(s), if necessary, of any problems that arise during shift.
  • Wash combs and trees as necessary.
  • Performs SAP functions including, but not limited to printing tickets, checking yields, etc
  • Documents, checks and/or records, including, but not limited to; set-up, cleaning, shutdown, chills, etc.
  • Performs other duties as assigned by Supervisor(s).


SAFETY TRAINING REQUIRED TO BECOME COMPETENT IN THE FOLLOWING: Fall protection, PPE, chemical specific, P.I.T, Proper Lifting,


Work Environment


Smoky, wet at times, poor lighting, slippery. Must be able to lift bellies weighing up to 25 pounds and bags of woodchips weighing up to 50 lbs. Use of strong cleaning compounds. Must have math ability and be able to read and write English. Mechanically inclined.



Thermometer, HACCP Documents, wood chips, hairnet, foamer, oil gun, shovel, etc.



Safety helmet, safety boots, face protection, hand protection, hearing protection,  rain suit, eye protection, fall protection, respirator.
